Reminds me of being at my oldest once, and son in law was grilling. When he handed me my plate, grand told me it was (insert name here, because it's late, and I don't remember). I looked at my daughter for explanation...seems they let them name the cow they're getting that year, and look for it everytime they drive by the pasture. lol, I don't think they'll end up vegetarians, either.

Same for us, we always had a cow, you got to know it, some we even rode as a horse....... but you knew all along it's purpose was to keep your belly full all winter.

MM, try using a cone, you want the chicken as relaxed as possible, nest it under your arm, calm it, then place it thru the cone with neck sticking out the bottom, light slit and it doesn't twitch.
If we do many more, we are going to build a plucker, about 60 bucks worth of parts, basically a 55 gal. barrel with a turntable and plucking fingers, works like a champ, you can pluck 3 or 4 5-51/2 Lb birds in under a minute.

My grandaughters grandparents and their siblings, on her dad's side raise cattle, and on slaughter weekend, it's a family process. My grandaughter is grandpa's girl, and he has had her out there since before she could walk, carrying her around while they butcher. He also takes her out on the guad to collect a deer if they've been hunting. Which she also does. While shes not the bit squeamish over any of that, she is if it's her own blood. She is still a girl, lol.

I have seen pics of the kill cones. I wonder if you could just alter a gallon jug like a bleach jug to do the same job. The videos I saw of the pluckers looked pretty cool. We just don't use it all that often. They sure would be nice though. Plucking by hand is a pretty tedious job, at least if you are doing multiple chickens at once. The flock may be on numbered days. They are due to molt nearly any time. They will not lay when they molt and once they do return to egg production everything I have read said that production will just go downhill after the second year.(They will be 2 years old in Feb./March) We may take the Winter off. LOL, they always say that, but we have some 5 years old and they still lay just fine. Eggs tend to get bigger the older the Hen is, so you can pretty well tell when they quit. I know the commercial guys get rid of them at 18 months, but they are obsessed with the last bit of production.
