Summer melon soup:-) Seed, peel & process a nice melon (I've never tried watermelon) in a food processor. Add the juice of a couple of limes, although a lemon is probably good too. Add freshly & finely chopped mint & cilantro. According to your preference you may choose the amount. Mr R isn't a mint fan so I go all cilantro. Chill & serve with a dollop of sour cream:-) a perfect first course on a hot evening. Or as an addition to brunch or lunch. I've also added a 1/4 cp of fresh blueberries to each bowl when serving.

Fresh corn cooking methods? I bring a large pot of water to a full boil & drop in the corn, then when the boil returns I allow 1minute per ear.

We dropped off corn last night to my sister and she said she always makes hers in the microwave now. She won't go back to boiling it. So, when we got home we tried it. Cooked it in the husk for a few minutes on a plate in the microwave. When it came out, the husk slid right off, we buttered and salted it. Yum! We won't cook it any other way now.

I can well understand the convenience of the microwave and if it just 2 ears I do it myself. I really prefer the old school boiling though. It just seems more thoroughly cooked and I always hate husking it and finding worms and stuff in there on my already cooked corn. It just feels more sanitary to husk it and then boil it. I thought of your post the other night when I pulled the corn out of the microwave and there on the plate was a cooked worm. The very next day I took all of the corn we had left and froze it. lol
